Buying a College Town Bagel Store
Bagel Café of Stony Brook was one of those rare opportunities where the upside was obvious. The business was already generating strong sales, even though it had been running with minimal attention and little effort to evolve. To me, that was a sign, if it could thrive in its current state, what could it become with the right energy behind it? The location alone made it a no-brainer. Right across from the Lake Grove Mall and just a five-minute drive from Stony Brook University and one of the largest hospital systems in the state, this spot had serious potential to become a go-to for students, staff, and locals. When I stepped in, I saw a clear path to growth. I started exploring ways to tap into the student population, especially by extending hours on weekends to capture the late-night crowd. With one of the few late-night food options in the area recently shutting down, the gap in the market became even more obvious. I also began experimenting with new revenue streams like smoothies, chopped salads, and other menu additions that could help drive ticket size and bring in new customers. This project has challenged me more than most. It’s required constant problem solving, learning how to manage a high-volume operation, and figuring out how to balance consistency with innovation. But I love it. Every week brings new lessons, and I get to keep refining the business. The goal is simple: become the go-to food destination for Stony Brook’s student body, faculty, hospital staff, and surrounding community. We’re not there yet, but we’re building something strong and getting closer every day.
