I wasn’t looking to buy an ice cream shop. But when I came across Coyle’s, something clicked. Coyle’s Ice Cream had been a staple in the Bay Shore community since 1985—a place filled with nostalgia, tradition, and generations of loyal customers. It wasn’t just a business; it was a piece of local culture. I stumbled upon it while researching community-rooted businesses with real history. The moment I walked through the doors, I felt the energy of something special that just needed the right hands to carry it forward. At the time, I was working in data and AI at IBM with an engineering background, trained to optimize systems and solve problems but I’d always been drawn to entrepreneurship. After meeting with the previous owners, diving into the operations, and seeing the potential for growth, I knew this was more than a good business opportunity. It was a chance to blend creativity, community, and commerce—and breathe new life into a beloved local brand. I took the leap, purchased the business, and immediately got to work—introducing modern systems, expanding catering and wholesale, launching new experiences, and growing Coyle’s reach across Long Island. We’ve seen year-over-year growth since the transition, but more importantly, we’ve reconnected the shop with the community it was built for. For me, Coyle’s wasn’t just a purchase. It was and still is, the beginning of a bigger journey.
